In 2001 Paul embarked on a journey to create something special with his talents. He sat down over lunch with a friend and outlined his idea of a recipe boook using rum and food. At that time the decision was one that would lead Paul down 2 year road to find a publisher and put together a team to help create the book. The end result is a stunning visual experience of food and rum. This 9x9 inch coffee table recipe book created a stir for MacMillan Publishers selling out within a short space of time. Chesterfield Brown joined Mount Gay Distilleries Ltd in 1994 as the bartender at the Mount Gay Rum Visitors' Centre. In this role he created many recipes that have a lingering impression on visitors. In 1997 he was nominated in the Barbados Minister of Tourism Awards, and won Bartender of the year. In 1999 he was made International Brand Spokesperson and travelled the world promoting Mount Gay Rum.
